Easy No Bake Chocolate Coconut Macaroons Recipe
I absolutely love chocolate coconut macaroons. They’re hands down one of my favorite recipes! Not only are they rich, chewy, and packed with chocolate flavor, but they also come together in no time with just a few simple ingredients.
This easy, no-bake recipe is perfect when you’re craving something sweet but don’t want to turn on the oven. Whether you’re making them for a quick dessert, a holiday tray, or just because (let’s be honest, any excuse is a good one!), these chocolate macaroons are guaranteed to hit the spot as a delicious treat.
You may have heard these delicious treats referred to by different names depending on where you’re from. In Canada, they’re often called chocolate coconut macaroons, but in the United States, they’re more commonly known as haystack cookies. No matter what you call them, they’re the perfect tasty treat for any occasion, with a texture of a candy bar that’s impossible to resist!

Growing up, my dad hardly ever baked. But when he did, it was always chocolate macaroons. Since it was the only thing he ever made, he had them perfected. They turned out perfectly every single time! And the best part? In just a few minutes, we’d have the most delicious, chewy treats ready to enjoy.
My dad taught me how to make these easy macaroons, and I’ve been making them ever since I was a teenager. Now, as a mom, I love them even more. My daughter has a dairy allergy, but with a few simple swaps (like plant-based butter and non-dairy milk) she can enjoy them just like I did growing up.
If you need a dairy-free option, these macaroons are super easy to adjust without losing any of their chewy, chocolatey goodness!
No Egg Whites, No Melted Chocolate, No Sweetened Condensed Milk! The Best No Bake Cookies!
Traditional coconut macaroons often call for egg whites, melted chocolate, or sweetened condensed milk, but this recipe skips all three which makes it even quicker and easier! No need to whip egg whites, melt chocolate, or track down condensed milk.
Instead, a simple stovetop mixture of butter, cocoa powder, milk, and sugar creates the perfect rich, chocolatey base.
Ingredients You’ll Need
Each ingredient plays an important role in making these chocolate coconut macaroons perfectly chewy and delicious. Here’s what you’ll need:
- Unsalted Butter: This adds richness and helps bind everything together. If you’re dairy-free, plant-based butter works just as well!
- Milk: Any kind will do! Regular, soy, almond, oat, or coconut milk all work great in this recipe.
- Cocoa Powder: Gives these macaroons their deep, chocolatey flavor.
- Granulated Sugar: Sweetens the macaroons and helps create the perfect texture when boiled with the cocoa and butter.
- Oatmeal: I use quick oats for the best texture, but rolled oats will work too! Just keep in mind that rolled oats will make the macaroons a bit chewier.
- Sweetened Shredded Coconut: Adds that classic coconut flavor and texture. If you only have unsweetened coconut, that’s totally fine! It’s a great option if you prefer your macaroons to be a little less sweet.
These simple ingredients come together to make a treat that’s rich, chewy, and impossible to resist!
How to Make Chocolate Coconut Macaroons
If you’re looking for one of the easiest cookies to make, this recipe is for you! These haystack cookies come together in minutes with simple ingredients and no baking required. Unlike French macarons, which require precise techniques, these coconut cookies are incredibly forgiving. Just mix, scoop, and let them set!
Step 1: Prepare the Coconut Mixture
In a large mixing bowl, combine the oats and shredded coconut. This step ensures that the main ingredient (coconut) is evenly distributed for the best texture.

Step 2: Make the Chocolate Base
In a saucepan over medium heat, melt the butter with milk, cocoa powder, and sugar. Stir occasionally until the mixture comes to a boil, then continue stirring for 4 minutes. This helps create the rich, fudgy base that makes these the best macaroons ever!

Step 3: Combine Everything
Remove the saucepan from the heat, then pour the coconut mixture (oats and coconut) directly into the saucepan. Stir well until everything is fully coated. This step is key to making sure every bite is packed with flavor.

Step 4: Scoop Onto a Cookie Sheet
Using a spoon or cookie scoop , drop small mounds of the mixture onto a parchment-lined cookie sheet.

Step 5: Let Them Set
Leave the macaroons at room temperature for about 1 hour or until firm. You can also speed up the process by chilling them in the fridge (it can be hard to wait for these!). Once set, they’re ready to enjoy!
These chocolate macaroons are the ultimate tasty treat! Chewy, chocolatey, and so easy to make, with the rich fudgy brownie texture and the satisfying bite of a candy bar!
