Banana Bread With Streusel Topping

Ingredients

  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 3 large overripe bananas, mashed (about 1¼ cups)
  • 1 tbsp milk (any kind, dairy or non-dairy both work!)
  • ½ cup walnuts (optional)
  • ½ cup chocolate chips (optional)

Instructions

  • Preheat oven to 350°F and grease a 9×5 inch loaf pan.
  • Beat together granulated sugar, softened butter, egg, and vanilla until smooth.
  • In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  • Gradually stir in dry ingredients, alternating with milk and mashed bananas. Don’t overmix. If desired, fold in optional mix-ins like walnuts or chocolate chips.
  • Pour batter into prepared pan and smooth the top.
  • Mix the streusel ingredients: brown sugar, flour, and melted butter; sprinkle on top of batter.
  • Bake for 1 hour, or until a toothpick comes out clean with only a few small moist crumbs.
  • Cool in the pan for 30 minutes on a wired rack, then remove from pan and cool completely on a wire rack.
  • Store at room temperature for up to 2 days or refrigerate for up to 1 week.

Notes

  • Browning too quickly? If the top of your banana bread is getting too dark before the center is fully baked, loosely tent the loaf with aluminum foil during the last 15–20 minutes of baking.
  • Check for doneness: Insert a toothpick into the center of the loaf. It should come out with clean with a few moist crumbs attached. That’s your sign it’s perfectly baked!
  • Baking time tips: Start checking around the 55-minute mark. Ovens can vary, so keep a close eye to prevent overbaking.
  • Using frozen bananas: Let them thaw at room temperature and drain any excess liquid before mashing. They work beautifully in this recipe and add great flavor!
  • Optional mix-ins: For extra flavor and texture, stir in ½ cup chopped walnuts, chocolate chips, or a combo of both before baking.
