Preheat oven to 350°F and grease a 9×5 inch loaf pan.
Beat together granulated sugar, softened butter, egg, and vanilla until smooth.
In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
Gradually stir in dry ingredients, alternating with milk and mashed bananas. Don’t overmix. If desired, fold in optional mix-ins like walnuts or chocolate chips.
Pour batter into prepared pan and smooth the top.
Mix the streusel ingredients: brown sugar, flour, and melted butter; sprinkle on top of batter.
Bake for 1 hour, or until a toothpick comes out clean with only a few small moist crumbs.
Cool in the pan for 30 minutes on a wired rack, then remove from pan and cool completely on a wire rack.
Store at room temperature for up to 2 days or refrigerate for up to 1 week.
