Sourdough Apple Fritters

These sourdough apple fritters are crispy, golden, and packed with juicy apples and warm cinnamon flavor, all with the help of sourdough discard! Topped with a sweet glaze, they’re the perfect fall treat to fry up in your own kitchen. Serve warm for best results!

Ingredients

Sourdough Apple Fritters

  • 1 ¼ cups (158g) all-purpose flour
  • ¼ cup (50g) granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 ½ tsp ground cinnamon
  • ¼ cup (60ml) milk, room temperature
  • 2 eggs, room temperature
  • ½ tsp vanilla extract
  • ½ cup (125g) sourdough discard, room temperature
  • 2 large apples (Granny Smith, Honey Crisp, or Gala), peeled, cored, and diced (about 1/2 inch chunks)
  • Vegetable or canola oil, for frying

For the Glaze

  • 2 cups (240g) powdered sugar
  • 2 tbsp (29g) butter, melted
  • 1 tsp vanilla extract
  • 2–3 tbsp (30ml-45ml) milk (dairy or non-dairy)

Instructions

  • Heat oil in a deep dryer or Dutch oven to 375°F (175°C). Line a wire rack with paper towels.
  • In a small bowl, whisk flour, sugar, baking powder, salt, and cinnamon.
  • In a large bowl, whisk together milk, eggs, vanilla, and sourdough discard until light and foamy.
  • Add dry ingredients to the wet ingredients. Then fold in chopped apples. Stir gently until just combined.
  • Drop spoonfuls of batter (about 1/4 cup or 80g) into the hot oil. You will need to slightly spread out the dough after adding to the oil. Fry 2–3 at a time for about 2 minutes per side, or until deep golden brown.
  • Remove with a slotted spoon and let drain on the wire rack.
  • Whisk together glaze ingredients in a small bowl.
  • Dip warm fritters into glaze, coating both sides. Place on a wire rack with parchment paper underneath the rack.
  • Serve warm and enjoy!

Notes

  • Maintain the oil at 375°F for best results.
  • These delicious sourdough apple fritters are best glazed while the fritters are still warm (not hot) so it soaks in nicely.
  • This recipe does not use instant yeast, just your trusty active sourdough starter or discard!
